RESPONSIBILITIES

-Actively share ideas, opinions & suggestions in weekly Sous Chef meeting
-Along with the Pastry Chef, is responsible for all menu presentation
-Ensures that all Pastry prep, production & decoration are as per business requirement for all outlets in timely manner.
-Liaise with all pastry production areas for their daily food order and summit to Pastry Chef / purchaser to prepare Market list in timely manner
-Be aware of daily revenue report & assist the pastry Chef in maintaining food & labor cost within budgetary guideline
-Responsible for plate presentation and hold temperatures are maintain as per companies guidelines
-Be actively involved in developing new dessert items for all outlets
-Support Executive Pastry Chef in creation of Showpieces
-Actively recruits talent to broaden The Hotels skill set
-Ensure all Pastry Colleagues are aware of standards & expectations
-Ensure all grooming, spot check, daily checklists, and temperature log sheet to be completed as required
-Maintain cleanliness and proper rotation of product in Pastry chillers & freezers
-Maintain consistent on the job training sessions for Culinary Colleagues.

-High volume banqueting experience
-Knowledge of sugar, chocolate work and wedding cake preparations
